On today’s recipe share we will be getting into fermented foods. DID YOU KNOW: a total of one trillion bacteria live together in our digestive system. Their total weight is about four pounds! We have more gut bacteria then we do cells in our body and these bacteria make up 98% of our serotonin (happy chemicals).
Fynn and I made a sourdough mother culture which we treat as a pet, feeding the bacteria each day. Our mother culture provides us probiotic-rich and easy to digest bread, pancakes, muffins and more… We create many of our own fermented foods like kombucha, veggies and sauerkraut too.
Recipe:
our sourdough starter is made with equal parts kamut flour (any quality flour will work) and spring/well/distilled water – simply mix and let sit in a dark place to ferment like a kitchen cupboard or above the fridge. You must empty about half the starter each day and feed your mother again using equal parts flour and water. In 7 days you can begin to use the expelled starter instead of tossing it. Instead you will use it as a yeast (preferable to baker’s yeast you buy) in pizza dough, bread and so much more.
